Chicken and rice salad

Ingredients

STRAINED YOGURT

Made with 100% fresh Greek milk and culture, without any added ingredients.

  • 300gr basmati rice, boiled
  • 700gr chicken breast fillet, boiled
  • 1 tea cup of mayonnaise
  • 1/2 tea cup of yogurt
  • 1 teaspoon curry powder
  • 4 peaches-nectarines, cut in slices
  • 1 lettuce crunchy core, roughly torn
  • some fresh basil leaves, roughly torn

Steps

  • 1. Dice your cucumber by cutting it in half longways, and then cutting it in half longways again. Line the halves up horizontally on your cutting board and slice through the length of your cucumber to dice it. Grate the carrots. Remove celery fibers. Put all the ingredients in a deep salad bowl.
  • 2. Add the rice, peas and corn.
  • 3. Chop the cooked chicken into edible pieces and put it to the salad bowl.
  • 4. Add the chopped parsley.
  • 5. Mix dressing ingredients together in a small bowl then pour over chicken salad. Serve on large plate.
